These homemade egg tarts combine tender, crumbly pastry with a creamy egg filling for a delightful dessert.
Made with simple ingredients and straightforward steps, they are perfect for afternoon tea, family gatherings, or a sweet treat at home.

Ingredients

For the pastry
- 150g all-purpose flour
- 75g unsalted butter, softened
- 30g powdered sugar
- 1 egg yolk
- 2 tbsp cold water, as needed
For the custard filling
- 2 large eggs
- 100ml milk
- 50g granulated sugar
- 50ml warm water
- A small pinch of vanilla powder (optional)

Instructions

1. Prepare the pastry
Combine the flour and powdered sugar in a bowl. Add the butter and rub it into the dry ingredients until the mixture resembles fine crumbs. Mix in the egg yolk and gradually add enough cold water to form a soft dough. Wrap and refrigerate for 20–30 minutes.
2. Shape the tart shells
Preheat the oven to 180°C. Divide the chilled dough into equal portions. Press each portion into a small tart mold, covering the base and sides with an even layer of pastry.
3. Prepare the custard
Dissolve the granulated sugar in the warm water and allow it to cool slightly. In a separate bowl, gently whisk the eggs with the milk and vanilla powder, if using. Stir in the cooled sugar water, then strain the mixture through a fine sieve for a smooth filling.
4. Fill the shells
Pour the custard into the prepared pastry shells, leaving a little space at the top to prevent overflowing.
5. Bake the egg tarts
Bake for 25–30 minutes, or until the pastry turns golden and the custard is just set. Baking time may vary depending on the size and depth of the molds, so check the tarts toward the end of cooking.
6. Cool and serve
Let the tarts cool in their molds for several minutes before carefully removing them. Serve slightly warm or at room temperature.

Tips for Better Egg Tarts

- Chill the dough before shaping to make it easier to handle.
- Add cold water gradually to prevent the pastry from becoming too wet.
- Strain the custard to remove air bubbles and create a smoother finish.
- Avoid overbaking, as this can make the custard firm and less delicate.
- Refrigerate leftovers in an airtight container and reheat gently if desired.

A Delicious Homemade Dessert

These homemade egg tarts bring together crisp pastry and silky custard in a simple, satisfying dessert. Enjoy them fresh from the oven after cooling slightly, or serve them at room temperature for an inviting afternoon treat.
